The taste experience
Oyster farmers for three generations, we have invented the solar tide, which opens the tables of the starred chefs to oysters from the Thau lagoon. From the salt spray to the soft evening light that falls, everything here is flavorful. Our biodynamic vegetable garden offers us daily all the flavours of the earth and the sun. This taste for life motivates us and we want to share it, not only through an authentic and healthy cuisine, but by immersing you in a total experience.
From the view of the vineyards to the lagoon, the terroir opens up to you to make your moment unique, from waking up to dinner.
Between land and sea
Around the oyster, our signature, you will enjoy our modern and creative interpretation of Sète gastronomy all year round. Fishing of the day in the lagoon, shellfish, seaweed….
On the land side, our cuisine highlights vegetables from local biodynamic agriculture and meat from local farmers.
Throughout the seasons, our chef will be there to offer you his exclusive products, always sublimating and respecting the local products.

A unique spot
Down by the lagoon, at the St Barth’, a renovated traditional oyster farm, you can taste the oysters which have made our family famous: the Spéciales Tarbouriech® oysters. Prepare yourself for a unique experience in taste, flavour and texture!
To ring the changes, we also serve Bouzigues and Seven oysters, as well as Sabine Tarbouriech’s version of Brasucade de moules (Brasucade of mussels).
