Oyster farmers for three generations, we have invented the solar tide, which opens the tables of the starred chefs to oysters from the Thau lagoon. From the salt spray to the soft evening light that falls, everything here is flavorful. Our biodynamic vegetable garden offers us daily all the flavours of the earth and the sun. This taste for life motivates us and we want to share it, not only through an authentic and refined cuisine, but by immersing you in a total experience.

Around the oyster, our signature, you will enjoy our modern and creative interpretation of Sète gastronomy all year round. Fishing of the day in the lagoon, shellfish, seaweed….

On the land side, our cuisine highlights vegetables from local biodynamic agriculture and meat from local farmers.

From a family of artisan-charcutiers, and having spent a large part of his childhood in the Halles de Versailles market, it’s a given that the catering trades hold no secrets for Nicolas Leseurre.

Once he obtained his BEP (vocational diploma) in cooking, he went to Scotland, land of legends and castles, to gain his first professional experience and perfect his English. Back in France, he joined the brigades of prestigious gastronomic establishments in the capital, in the South and in Versailles. And it was in the kitchens of Joël Robuchon and Jérôme Banctel that Nicolas Leseurre learned the techniques and attention for detail of the great tables.

His career then brought him to the Montpellier region, where his encounter with the owners of the Domaine Tarbouriech resulted in a desire to work together. They share the same values, the same love of products and, above all, the same desire to share Sète’s culinary identity by working with regional ingredients from small local producers. Nicolas Leseurre proposes authentic and creative cuisine by using very particular cooking techniques such cooking vegetables à la chaux (with limestone).

Down by the lagoon, at the St Barth’, a renovated traditional oyster farm, you can taste the oysters which have made our family famous: the Spéciales Tarbouriech® oysters. Prepare yourself for a unique experience in taste, flavour and texture!

To ring the changes, we also serve Bouzigues and Seven oysters, as well as Sabine Tarbouriech’s version of Brasucade de moules (Brasucade of mussels).
